Apple Cobbler

Yes. Gluten Free Cobbler. Again, it was a recipe that surprised me, it was even better made with the lighter rice flour. I'm am stunned.

There was none left. We just kept eating it!

Apple Cobbler

3 medium golden delicious apples
1/4 cup sugar
2 tsp cinnamon

1 stick butter, unsalted
1 cup rice flour
1 cup sugar
1 tsp baking powder
1/2 tsp salt
1 cup milk

To prepare the apples, core, peel and slice into crescent shapes. I used an apple wedger, it cores and wedges it into 10 slices. I then peeled them, and cut each slice in half. Sprinkle the 1/4 cup sugar and cinnamon over it. Mix well to cover all the apples.

Whisk the flour, sugar, baking powder and salt together in a medium bowl. Add milk and whisk until well mixed.

Cut butter into a baking dish (I used a Pampered Chef deep dish round baker - but you could use an 11 X 7 pan), Place in a 350 degree preheated oven. (careful not to let it scortch). Pull pan out of the oven and pour the batter into the pan. Lay in the apple slices pressing into the batter. Pour the juice created in the bowl of apples over top.

Return pan to hot oven and bake for 50 to 60 minutes (after 45 minutes, check every 5 until a toothpick comes out clean).

Yummy!

Of course, best enjoyed ala mode!

Well, I was wildly distracted while trying to prepare this recipe and wound up putting the butter in with the dry ingredients and milk instead of melting it in the pan first. As I was whisking away my mind was not on the task at hand then suddenly my eyes focused upon the gloppy mess I had created. After re-reading the directions and slapping my forehead, I shrugged my shoulders and dumped it all in the pan, added the apples and tossed it into the oven. 30 minutes later it's a pitiful pale thing but with at least fifteen more minutes to go it can still be redeemed! Here's hoping!

This was easy to make..I'm excited to see how it turns out--I sprinkled chopped pecans over top of the apple mixture :) Thanks for the recipe!!

JGF baking still amazes me! Batter without eggs still makes a cake... I followed the recipe exactly fearing a failure, yet it turned out rather yummy. Very different from traditional cobbler but it is a keeper in my book. Definitely needs to be served hot with vanilla ice- cream.

I've experimented with newer flours since this recipe was printed, feel free to experiment. I've found I love teff and quinoa flour. :)
